Fresh Fruit Fiesta with Cinnamon Sugar Chips

Ingredients
  

  • 2 peaches
  • 1 mango
  • 4 kiwis
  • 16 oz strawberries
  • 1 Tablespoon fresh lemon juice
  • 2 Tablespoons honey
  • 2 Tablespoons fresh basil
  • 1/3 cup granulated sugar
  • 1 teaspoon cinnamon
  • 10 tortillas
  • Coconut oil cooking spray

Method
 

  1. Chop the fruit: Peel and chop all of the fruit into small pieces. Add it to a large bowl and toss to combine.
  2. Mix together: In a small bowl, stir together the lemon juice and honey until well combined. Pour over the fruit and mix to incorporate. Cover and refrigerate while you prepare the chips.
  3. Prep the cinnamon chips: Preheat the oven to 350°F. Line two large baking sheets with parchment paper. In a small bowl, combine the granulated sugar and cinnamon. Spray both sides of the tortillas with cooking spray and sprinkle the cinnamon sugar mixture on both sides. Stack the tortillas on top of each other and cut them into 8 triangles.
  4. Bake: Arrange the tortilla triangles in a single layer on the prepared baking sheets and bake in the preheated oven for 10-12 minutes, flipping halfway through. They will become crispier as they cool.
  5. Serve: Stir in the fresh basil and toss to mix the juices. Serve with the cinnamon sugar chips.
