Ingredients
  

  • 1 large English cucumber, peeled and thinly sliced
  • 1/2 cup mayonnaise (full-fat recommended)
  • 2 tablespoons grated Parmesan cheese, plus more for garnish
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1/4 teaspoon Worcestershire sauce
  • 1/4 teaspoon black pepper, freshly ground
  • 1/8 teaspoon salt, or to taste
  • 1/4 cup croutons (homemade or store-bought)

Method
 

  1. Begin by peeling the cucumber, then thinly slice it to about 1/8 inch thick. Pat the slices dry with paper towels to remove any excess moisture. Alternatively, you can lightly salt the cucumber slices and let them rest in a colander for 15-20 minutes. Rinse the slices thoroughly and pat them dry before continuing.
  2. In a medium bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, and Worcestershire sauce until the mixture is smooth.
  3. Incorporate the minced garlic and grated Parmesan cheese into the bowl.
  4. Season the mixture with black pepper and salt. Taste it and make any necessary adjustments.
  5. Continue whisking all ingredients together until the dressing achieves a smooth and creamy texture. If the dressing appears too thick, you can add a teaspoon or two of water to reach your desired consistency.
  6. In a large bowl, gently toss the sliced cucumber with the Caesar dressing until all pieces are evenly coated.
  7. Just prior to serving, add the croutons and gently mix to combine.
  8. Transfer the salad to a serving bowl or individual plates. Garnish with extra grated Parmesan cheese and a sprinkle of freshly ground black pepper. If desired, arrange grilled chicken or shrimp on top.
  9. Serve immediately.
