  • 1 cup breadcrumbs
  • 1 egg 🥚
  • ¼ cup green onions, chopped 🌿
  • ½ cup pineapple juice 🍍
  • 2 tablespoons soy sauce
  • 1 teaspoon garlic powder 🧄
  • 1 teaspoon ginger, grated
  • ½ cup teriyaki sauce
  • 1 cup pineapple, chopped 🍍
  • Salt & pepper, to taste

Instructions

1️⃣ Preheat & Prep:

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper.

2️⃣ Make the Meatballs:

  • In a large bowl, mix together:
    Ground chicken
    Breadcrumbs
    Egg
    Green onions
    Pineapple juice & soy sauce
    Garlic powder & grated ginger
    Salt & pepper
  • Form into small meatballs and place them on the prepared baking sheet.

3️⃣ Bake the Meatballs:

  • Bake for 20-25 minutes, or until the meatballs are cooked through.

4️⃣ Make the Teriyaki Glaze:

  • In a large skillet, heat teriyaki sauce over medium heat.
  • Add the baked meatballs & chopped pineapple.
  • Toss to coat and cook for an additional 5 minutes, until the sauce thickens and the pineapple is heated through.
