Ingredients

Scale
  • Tater tots (quantity as needed for serving)
  • 15 eggs, scrambled
  • Sausage gravy (double batch, homemade or store-bought)
  • Salt and pepper, to taste
  • Taco cheese blend, for topping

Instructions

Preheat your oven to 425°F (218°C) and bake the tater tots according to the package instructions, usually around 30 minutes, until golden and crispy.

While the tater tots are baking, prepare the sausage gravy using your preferred recipe. If you want an extra spicy kick, stir in red pepper flakes and cayenne powder to taste.

In a large skillet over medium heat, scramble the eggs, seasoning with salt and pepper. Cook them until fully set but still soft and moist.

To assemble the breakfast bowls, start by placing a layer of crispy tater tots at the bottom of each bowl. Add a generous serving of scrambled eggs on top.

Pour a hearty amount of sausage gravy over the eggs, letting it soak into the layers below. Sprinkle a taco cheese blend over the top, allowing the residual heat to melt it slightly.

For a fresh and zesty contrast, optionally top with fresh Mexican-style salsa before serving. Serve hot and enjoy!

Notes

  • Swap out tater tots for hash browns or breakfast potatoes for a different texture.
  • Try using pepper jack cheese for an extra spicy twist.
  • If making ahead, store the components separately and assemble just before serving to keep the tots crispy.
  • Leftovers can be stored in an airtight container for up to 3 days and reheated in the oven or microwave.
