Slow Cooker Garlic Butter Beef Bites & Potatoes

A comforting and flavorful dish featuring tender beef bites and perfectly cooked baby potatoes, all smothered in a rich garlic butter sauce. This slow cooker recipe is perfect for cozy dinners with minimal effort.

For the beef and potatoes:

  • 1 ½ pounds beef stew meat, cut into bite-sized pieces
  • 1 pound baby potatoes, halved
  • 1 tablespoon olive oil

For the garlic butter sauce:

  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper
  • ¼ cup beef broth

Optional garnish:

  • Fresh parsley, chopped

Instructions

1️⃣ Sear the beef:
Heat olive oil in a skillet over medium-high heat. Sear the beef bites for 2-3 minutes on each side until browned. Transfer the beef to the slow cooker.

2️⃣ Prepare the potatoes:
Add the halved baby potatoes to the slow cooker along with the seared beef.

3️⃣ Mix the garlic butter sauce:
In a small bowl, whisk together the melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper.

4️⃣ Combine ingredients:
Pour the garlic butter sauce evenly over the beef and potatoes. Add the beef broth to the slow cooker to keep the dish moist and flavorful.

5️⃣ Cook:
Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the potatoes are fully cooked.

6️⃣ Serve:
Garnish with freshly chopped parsley if desired and serve warm.

  • Choosing beef: Use well-marbled stew meat for tender, flavorful bites.
  • Potatoes substitute: If you don’t have baby potatoes, use Yukon Gold or red potatoes cut into small chunks.
  • Broth option: You can substitute beef broth with chicken broth or vegetable broth for a slightly different flavor.
  • Make it creamy: Add ¼ cup heavy cream during the last 30 minutes of cooking for a richer sauce.
