Garlic Parmesan Chicken and Potatoes

A hearty and flavorful one-pan dish that combines tender chicken bites, golden roasted baby potatoes, and a rich, cheesy garlic Parmesan sauce. Perfect for a satisfying family meal!

  • Protein & Vegetables:
    • 1 pound chicken tenderloins or breasts, cut into bite-sized pieces
    • 1 pound baby potatoes, halved
  • Seasonings:
    • 1 ½ teaspoons paprika
    • 1 ½ teaspoons poultry seasoning
    • 1 teaspoon black pepper
  • Other Ingredients:
    • 2 tablespoons olive oil, divided
    • 2 tablespoons butter
    • 2 cloves garlic, minced
    • ½ cup garlic Parmesan wing sauce
    • 1 cup shredded mozzarella

Instructions

1️⃣ Preheat and prepare:

Preheat your oven to 400°F (200°C).

Prepare a large baking sheet and lightly grease it if needed.

2️⃣ Season chicken and potatoes:

Trim the chicken and cut into bite-sized pieces. Place in a large bowl, drizzle with 1 tablespoon olive oil, and toss to coat.

In another bowl, add the halved baby potatoes, drizzle with the remaining tablespoon of olive oil, and toss.

3️⃣ Mix seasonings:

In a small bowl, combine paprika, poultry seasoning, and black pepper.

Sprinkle half of the seasoning over the chicken and the other half over the potatoes, tossing both to coat evenly.

4️⃣ Roast potatoes:

Spread the seasoned potatoes evenly on the prepared baking sheet. Roast for 20 minutes, or until golden and fork-tender.

5️⃣ Cook chicken:

While the potatoes roast, heat a large skillet over medium-high heat.

Add the seasoned chicken to the skillet and cook for 7-10 minutes, until browned and cooked through.

6️⃣ Add garlic and butter:

Reduce the skillet heat to medium. Add butter and minced garlic to the chicken, stirring for 1-2 minutes until fragrant.

7️⃣ Combine and finish:

Once the potatoes are roasted, add them to the skillet with the chicken. Toss gently to combine.

Pour the garlic Parmesan sauce over the chicken and potatoes, stirring to coat everything evenly.

8️⃣ Melt mozzarella:

Sprinkle shredded mozzarella over the mixture, cover the skillet with a lid, and let the cheese melt (about 5 minutes).

9️⃣ Serve:

Serve hot, garnished with fresh parsley or additional Parmesan, if desired.

Notes

  • For extra crispiness, broil the skillet (oven-safe only) for 2-3 minutes after melting the cheese.
  • Adjust the garlic Parmesan sauce to taste for a milder or bolder flavor.
  • Substitute baby potatoes with sweet potatoes for a twist.
