  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 1 bell pepper, finely chopped (optional)
  • 2 cloves garlic, minced
  • 1 can (8 oz) tomato sauce
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 hamburger buns (or sandwich rolls)
  • Fresh parsley or green onions for garnish (optional)

Instructions

1️⃣ Cook the Chicken: Heat olive oil in a large skillet over medium heat. Add the ground chicken and cook, breaking it up with a spoon, for about 5-7 minutes until browned and cooked through.

2️⃣ Sauté the Veggies: Add the chopped onion, bell pepper (if using), and minced garlic to the skillet. Sauté for 3-4 minutes, or until the vegetables are soft and fragrant.

3️⃣ Add the Sauces & Seasonings: Stir in the tomato sauce, tomato paste, Worcestershire sauce, Cajun seasoning, smoked paprika, onion powder, garlic powder, salt, and pepper. Mix well and bring the mixture to a simmer.

4️⃣ Simmer: Let the mixture simmer for 8-10 minutes, stirring occasionally, until the sauce thickens to your desired consistency. If the mixture becomes too thick, add a splash of water to loosen it up.

5️⃣ Assemble the Sloppy Joes: Toast the hamburger buns lightly in the oven or on a skillet. Spoon the Cajun chicken mixture onto the bottom half of each bun.

6️⃣ Serve & Garnish: Top with the other half of the bun and garnish with fresh parsley or green onions if desired. Serve hot!
