  • 1 lb Italian sausage (mild or spicy)
  • 8 oz pasta (penne, fettuccine, or your choice)
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup spinach, roughly chopped
  • ½ cup sun-dried tomatoes, chopped
  • ¼ cup grated Parmesan cheese

Instructions

Cook the Pasta – In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.

Brown the Sausage – In a large skillet, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it up with a spoon as it cooks.

Sauté Aromatics – Add the diced onion and minced garlic to the skillet and sauté for about 3 minutes, until softened and fragrant.

Make the Sauce – Stir in the heavy cream, chicken broth, Italian seasoning, salt, and black pepper. Bring the mixture to a gentle simmer, allowing the flavors to combine.

Add Vegetables – Stir in the spinach and sun-dried tomatoes and cook for another 2 minutes, or until the spinach is wilted.

Combine with Pasta – Toss the cooked pasta into the creamy sausage sauce, ensuring it’s well coated.

Finish & Serve – Sprinkle with grated Parmesan cheese, stir to combine, and serve immediately.
