2 boneless, skinless chicken breasts, halved horizontally into cutlets
Salt and black pepper to taste
1 teaspoon garlic powder
2 tablespoons olive oil
2 tablespoons butter
8 ounces mushrooms, sliced
3 cloves garlic, minced
2 cups fresh spinach
1 cup heavy cream
½ cup grated Parmesan cheese
½ teaspoon Italian seasoning
Splash of chicken broth (optional, to loosen sauce)
Chopped parsley for garnish (optional)
Season the chicken cutlets on both sides with salt, pepper, and garlic powder. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4 to 5 minutes per side until golden and cooked through. Remove from the skillet and set aside.
