Baked Garlic Parmesan Potato Wedges

These crispy, golden potato wedges are packed with garlic, Parmesan, and Italian seasoning, making them the perfect side dish or snack. Serve them with ranch or blue cheese dressing for an extra flavor boost!

  • 34 large russet potatoes, cut into wedges
  • 4 tbsp olive oil
  • 2 tsp salt
  • 2 tsp garlic powder
  • 2 tsp Italian seasoning
  • ½ cup shredded Parmesan cheese
  • Optional: Fresh parsley (for garnish)
  • Optional: Ranch or blue cheese dressing for dipping

Instructions

1️⃣ Preheat the oven: Set your oven to 375°F (190°C). Lightly grease a large baking sheet to prevent sticking.

2️⃣ Prep the potatoes: Wash and cut the potatoes into thick wedges. Place them in a large bowl and drizzle with olive oil. Toss to coat evenly.

3️⃣ Mix the seasonings: In a small bowl, combine salt, garlic powder, and Italian seasoning.

4️⃣ Coat the wedges: Sprinkle the shredded Parmesan over the potatoes and toss them again. Then, sprinkle the seasoning mix evenly over the wedges.

5️⃣ Arrange on the baking sheet: Place the wedges in a single layer, skin-side down to ensure even cooking.

6️⃣ Bake: Put the tray in the oven and bake for 25-35 minutes, or until the potatoes are golden brown and fork-tender.

7️⃣ Garnish & serve: Sprinkle with chopped fresh parsley for a fresh touch. Serve hot with ranch or blue cheese dressing for dipping.

Notes

  • For extra crispiness, bake at 400°F (200°C) for the last 5 minutes.
  • Swap russet potatoes for Yukon Gold for a creamier texture.
  • Add a pinch of red pepper flakes for a spicy kick!
