  • 4 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar
  • 2 ½ cups shredded coconut

For the Coating:

  • Additional powdered sugar (for dusting, optional)

Instructions

1️⃣ Mix the Base:
In a large mixing bowl, beat together butter, cream cheese, and vanilla until smooth and creamy.
Gradually add powdered sugar, mixing until well combined. Stir in shredded coconut until fully incorporated.

2️⃣ Shape the Candy:
Take small portions of the mixture and roll into balls or oblong “potato” shapes. If the mixture is too sticky, refrigerate for 20-30 minutes before shaping.

3️⃣ Coat the Candy:
Roll each candy piece in cinnamon to coat completely. For a more realistic “potato” look, lightly dust with powdered sugar after rolling.
