This One Pot Kielbasa Pasta is a savory, creamy dish packed with smoky sausage, tender pasta, and a rich, cheesy sauce. It’s a quick and comforting meal made in a single pot for minimal cleanup and maximum flavor—perfect for busy weeknights.
1 tablespoon olive oil
14 oz kielbasa sausage, sliced into rounds
1 small onion, chopped
2 cloves garlic, minced
2 cups chicken broth
1 cup milk
8 oz uncooked pasta (penne, rotini, or shells work well)
1 cup shredded cheddar cheese
½ cup grated Parmesan cheese
½ teaspoon paprika
Salt and pepper to taste
Optional: chopped parsley for garnish
Heat olive oil in a large pot or deep skillet over medium heat. Add the sliced kielbasa and cook for 3-4 minutes until browned. Remove and set aside.
In the same pot, add the chopped onion and cook for 2-3 minutes until softened. Stir in the garlic and cook for another 30 seconds.
Pour in the chicken broth and milk, then add the uncooked pasta. Stir to combine and bring to a gentle boil.
Reduce the heat, cover, and simmer for 10-12 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
Return the kielbasa to the pot and stir in the cheddar and Parmesan cheeses. Season with paprika, salt, and pepper. Stir until the cheese is melted and the sauce is creamy.
Remove from heat and let it sit for a couple of minutes to thicken. Garnish with parsley if desired and serve warm.
Feel free to add spinach, bell peppers, or broccoli for extra veggies. Adjust the cheese blend to your taste—Monterey Jack or mozzarella also work well. This dish is best served fresh but can be reheated with a splash of milk to loosen the sauce.
