Easy Garlic Parmesan Chicken and Potatoes

A simple yet flavorful one-pan meal featuring juicy garlic-seasoned chicken and crispy roasted potatoes, all topped with a generous sprinkle of Parmesan cheese. Perfect for busy weeknights or a comforting family dinner.

For the chicken:

2 boneless, skinless chicken breasts

1 tbsp olive oil

1 tsp garlic powder

Salt and pepper to taste

For the potatoes:

4 medium Yukon gold potatoes, diced

2 tbsp olive oil

1 tsp garlic powder

½ tsp paprika

Salt and pepper to taste

For topping:

½ cup grated Parmesan cheese

1 tbsp chopped parsley (optional)

Instructions

1️⃣ Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

2️⃣ Prepare the potatoes: In a large bowl, toss the diced potatoes with 2 tbsp olive oil, garlic powder, paprika, salt, and pepper. Spread them evenly on one half of the baking sheet.

3️⃣ Season the chicken: Rub chicken breasts with 1 tbsp olive oil, garlic powder, salt, and pepper. Place them on the other half of the baking sheet.

4️⃣ Bake: Bake in the preheated oven for 25-30 minutes, flipping the chicken halfway through. Potatoes should be golden and tender, and chicken fully cooked (internal temperature of 165°F / 74°C).

5️⃣ Add Parmesan: Remove the tray from the oven and sprinkle Parmesan cheese over the chicken and potatoes. Return to the oven for 3-5 minutes, or until the cheese melts and starts to crisp.

6️⃣ Garnish and serve: Sprinkle with chopped parsley if desired. Serve hot and enjoy this cozy, savory meal!

Notes

Potato choice: Yukon gold potatoes provide a creamy texture and crisp well when roasted, but you can substitute with red potatoes or russets.

Chicken options: You can use chicken thighs for a juicier result. Adjust the cooking time slightly if they are bone-in.

Crispier potatoes: For extra crispiness, soak diced potatoes in cold water for 30 minutes, then drain and dry before seasoning.
