It’s a quick and easy meal that’s perfect for busy weeknights or a family dinner. With its hearty flavors and gooey cheese, this dish is sure to please even the pickiest eaters.

Ingredients

Scale

1 lb ground beef

1 onion, diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes

1 cup beef broth

2 cups elbow macaroni (or pasta of your choice)

2 cups shredded cheddar cheese

1 cup shredded mozzarella cheese

1 tsp Italian seasoning

Salt and pepper, to taste

1 tbsp olive oil

Instructions

In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is soft and translucent, about 3-4 minutes.

Add the ground beef to the skillet, breaking it apart as it cooks. Cook until browned and no longer pink, about 6-7 minutes. Drain any excess fat.

Stir in the diced tomatoes (with juice), beef broth, and Italian seasoning. Bring the mixture to a simmer, then add the uncooked elbow macaroni. Stir to combine.

Cover the skillet and cook for about 10-12 minutes, or until the pasta is tender and has absorbed most of the liquid. Stir occasionally to prevent the pasta from sticking.

Once the pasta is cooked, reduce the heat to low and stir in the shredded cheddar and mozzarella cheese. Continue stirring until the cheese is melted and the dish is creamy.

Season with salt and pepper to taste. Serve hot and enjoy!

Notes

  • You can use ground turkey or chicken for a leaner option.

  • For extra flavor, add a handful of chopped spinach or bell peppers along with the onions and garlic.

  • Leftovers can be stored in the refrigerator for up to 3 days and reheated on the stovetop with a splash of milk or broth to restore creaminess.
