6 eggs

½ lb breakfast sausage
2 tbsp all-purpose flour
1 ½ cups whole milk
½ tsp black pepper
Salt to taste

Instructions

1 Bake the tater tots: Preheat the oven to 425°F (220°C). Spread the tater tots on a baking sheet and bake according to package instructions, about 25-30 minutes, until golden and crispy.

2 Make the sausage gravy: In a skillet over medium heat, cook the sausage, breaking it apart, until fully browned. Do not drain the fat. Sprinkle in the flour and cook for 1-2 minutes, stirring to form a roux. Slowly whisk in the milk and bring to a simmer. Cook until thickened, about 5 minutes. Season with black pepper and salt to taste. Remove from heat and keep warm.

3 Scramble the eggs: In a bowl, whisk together the eggs, milk, salt, and pepper. Heat butter in a nonstick skillet over medium heat. Add the eggs and scramble gently until just set.

4 Assemble the bowls: Divide the tater tots between serving bowls. Top with scrambled eggs, ladle on the sausage gravy, and sprinkle with shredded cheese if using.

5 Add toppings: Garnish with green onions, a dash of hot sauce, or crumbled bacon if desired.
