  • 32 ounces canned refried beans (two 16-ounce cans)
  • 3 tablespoons water
  • 1 ½ cups premade mild guacamole
  • 2 cups sour cream
  • 1 ounce mild taco seasoning
  • 16 ounces chunky mild salsa, (drained through a mesh strainer)
  • 2 cups shredded lettuce
  • 2 cups pre-shredded fiesta blend cheese
  • 2.25 ounces sliced black olives, (well drained)
  • 1 cup chopped roma tomatoes
  • ½ cup green onions, (thinly sliced)

Instructions

  1. Begin by placing the canned refried beans into a small mixing bowl. Add the 3 tablespoons of water and mix until the mixture is completely smooth and combined.
  2. Use a silicone spatula or an offset spatula to evenly spread the refried beans into the bottom of a 9×13 baking dish.
  3. Layer the premade guacamole evenly over the refried beans.
  4. In a separate small mixing bowl, combine the sour cream with the taco seasoning, whisking until the mixture is well incorporated.
  5. Spread the sour cream and seasoning mixture over the layer of guacamole.
  6. Drain the chunky mild salsa using a mesh strainer to remove excess liquid, then spread the salsa over the sour cream layer.
  7. Sprinkle the shredded fiesta blend cheese evenly over the salsa.
  8. Add a layer of shredded lettuce on top of the cheese.
  9. Evenly distribute the drained sliced black olives over the lettuce.
  10. Sprinkle the chopped roma tomatoes over the black olives, patting them to remove any excess juice if necessary.
  11. Finally, add the thinly sliced green onions over the chopped tomatoes. Cover the dish tightly with plastic wrap and chill in the refrigerator for 1 hour before serving with tortilla chips. Serve, and enjoy!
